2 large zucchini, grated
1 tsp salt
¼ cup golden flax seed meal
2 tbsp coconut flour
2 tsp Italian Seasoning (OR ½ tsp dried oregano, ½ tsp dried basil, ½ tsp garlic powder)
1 tsp ground cumin
½ tsp pepper
1 tsp Creole Season Salt
½ cup crumbled feta
½ cup grated parmesan
2 scallions, chopped
2 large eggs
6-8 tbsp coconut oil or butter
¼ - ½ cup Crème Fresh or Greek yogurt for garnish on top or to dip in the fritters
Grate zucchini over an absorbent towel or a fine-mesh sieve and sprinkle with salt. Let water from the zucchini drain out as much as possible, about an1 hour. Put another absorbent towel over the top of the zucchini and press down on the zucchini to pull as much moisture out as possible.
In a mixing bowl, mix with a spatula, flax seed meal, coconut flour, Italian seasoning, cumin, pepper, Creole season salt, feta, parmesan and scallions, then stir in zucchini and eggs until thoroughly combined.
In a frying pan melt coconut oil of medium heat.
Take a heaping scoop of the zucchini mixture and place into the heated pan and press down with a spoon to form patties that are around 3-4 inches in diameter and 1/2 inch thick.
Cook each side until golden brown, about 3-5 minutes per side.
Plate and serve with crème fresh or Greek yogurt.

I love to make cookies on Sundays, so on this fine Sunday I just created a new chocolate chip cookie recipe. Holler! It's different than the one that's in my latest cookbook; these are softer and more gooey if you're into that. The recipe doesn't call for butter but you can add a couple of tablespoons of butter for even crispier edges. Enjoy!
Almond Butter Chocolate Chip Cookies
1 Large egg
1 tbsp Vanilla extract
½ cup Creamy Almond Butter
½ cup Coconut Sugar (or your favorite sugar substitute)
1 tsp Salt
¼ tsp Baking Soda
½ - ¾ cup Dark Chocolate Chips (I use Lilly’s stevia sweetened dark chocolate chips)
Turn oven on 350 degrees Fahrenheit
In a mixing bowl lightly beat the egg then mix in the rest of the ingredients, except for the chocolate chips, until thoroughly blended. Fold in chocolate chips.
Line a baking pan with parchment paper and drop single spoonful’s of the cookie dough into the lined pan about 3 inches apart and lightly press the dough down (this gives a flatter and crispier cookie).
Bake for 8 minutes and let rest in pan for 3-5 minutes then transfer to a plate. Send your Scrumptious cookies lots of Love knowing that your food is always working for you and Enjoy!
½ lb of Ahi tuna
1 tsp Dried basil
1 tsp Oregano
½ tsp Santa Maria
1 tsp Creole Seasoning
1 tsp Garlic powder
¼ cup Trader Joe’s Organic Greek Olive Oil
1 tsp Dried Parsley
2-4 tbsp Butter
1 tbsp Olive Oil
For Salad Dressing:
¼ cup Trader Joe’s Organic Greek Olive Oil
Juice from ½ lemon squeezed lemon, about 1 – 1 ½ tbsps
1 tbsp Garlic powder
½ tsp Cumin
½ - 1 tsp Santa Maria seasoning
½ a bag (about 4 cups) Arugula
¼ cup Fresh Basil, chopped
1 cup sliced Heirloom tomatoes
¼ - ½ Sweet onion, thinly sliced
On Top of Salad:
½ - 1 cup Fresh Mozzarella, sliced
½ - ¾ Avocado
Chopped Cilantro, garnish – as much as you like
Aged balsamic *optional
Take all the ingredients for the tuna, except for the tuna, and mix thoroughly in a bowl. Add tuna to mixture making sure it’s coated thoroughly and evenly.
Add butter and a little bit of olive oil to your frying pan and melt over medium high heat, making sure you don’t burn the butter. Then place very well coated Ahi in frying pan searing each side for 10-20 seconds max. Transfer to a plate to let it rest.
In a bowl large enough to mix a salad mix arugula, fresh basil and heirloom tomatoes along with all ingredients for the dressing blending thoroughly until everything is well coated.
Plate the salad. (In the photo I placed the arugula on the plate first then added more dressing to the tomatoes separately for a better presentation). Then place mozzarella and avocado on top.
Slice the Ahi and place on top. Garnish with cilantro and aged balsamic vinegar. Send your food lots of Love and Good Vibes and Enjoy your food!
